INGREDIENTS:
2 tbsp olive oil
3/4 lbs Swiss chard, stems diced (1 cup), leaves torn (4 cups)
1 1/4 cups diced onion
1 1/4 cups shredded carrot
2 tsp chopped fresh rosemary leaves (or 1 tsp dried rosemary)
2 tsp crushed red pepper flakes
5 cups reduced-sodium fat-free chicken broth
28 oz. of diced tomatoes, undrained (1 can)
16 oz. red kidney beans, rinsed and drained (1 can)
2 cups shredded roasted chicken breast
1 1/4 cup ditalini or tubetini pasta (6 oz.)
2 tbsp grated Parmesan cheese
DIRECTIONS:
1. Heat oil in a large pot over medium-high heat. Add chard stems, carrots, onions, garlic, rosemary and red pepper flakes. Sauté for 5 minutes. Then add chard leaves and sauté 2 minutes, or until wilted.
2. Add broth, tomatoes, and beans to the pan and bring to a boil. Reduce heat to low, cover, and cook 10 minutes.
3. Stir in chicken and pasta. Bring to a boil, reduce heat to low, cover, and simmer 8 to 10 minutes longer, until pasta is cooked. Stir in grated cheese. Ladle into bowls and serve with extra cheese, if desired.
