- 2 cups cooked chicken, cut into bite-sized pieces
- 4 cups shredded cabbage
- 1 cup sliced mushrooms
- 1 cup grated carrots
- 2 tbsp chopped cilantro
- 1 thinly sliced cucumber
- 3 thinly sliced green onions
- 1 mandarin orange or tangerine, divided into sections
- 1/2 cup nonfat Asian or Oriental-style salad dressing
- black pepper
DIRECTIONS:
1. Combine the chicken, mushrooms, cabbage, carrots, cucumber, cilantro and dressing in a large bowl. Toss well.
