INGREDIENTS:

  • 2 cups cooked chicken, cut into bite-sized pieces
  • 4 cups shredded cabbage
  • 1 cup sliced mushrooms
  • 1 cup grated carrots
  • 2 tbsp chopped cilantro
  • 1 thinly sliced cucumber
  • 3 thinly sliced green onions
  • 1 mandarin orange or tangerine, divided into sections
  • 1/2 cup nonfat Asian or Oriental-style salad dressing
  • black pepper

DIRECTIONS:

1. Combine the chicken, mushrooms, cabbage, carrots, cucumber, cilantro and dressing in a large bowl. Toss well.

2. Top off the salad with the tangerine sections and green onions. Add pepper to taste.
